Even though I’ve literally been running this entire holiday season, I forced myself to stay up ’til 1:30 the other night making my annual batch of candied pecans. For my family, it’s just not the holidays without them. Passed down from my “Memo” to my mom and then to me, this is the best and easiest candied pecan recipe I have found. I love having them sitting around my house and packaging them up in cute little Mason jars to give away as gifts. So while my family is scrambling around completely crazy and I’m bleary-eyed from lack of sleep, I smile knowing that I’m keeping this simple and lovely tradition alive. That makes me happy!
For 1 pound package of pecan halves
1 egg white
1 tablespoon water
Beat until frothy
Stir in pecans until coated
1 cup sugar
1 teaspoon salt
1 teaspoon cinnamon
Pour sugar mixture into nuts and mix until nuts are coated.
Spread on buttered cookie sheet in 250 degree oven.
Stir every 15 minutes for 1 hour or until done.
