Of the many treasures I’ve collected from my travels to the beautiful Hawaiian island of Kauai, one of my favorites has been my found love of granola. Kauai is definitely one of my happy places, and it was on one of our first trips there that I discovered Anahola Granola. Its owner Becky founded it in 1986 with a focus on using small batch ingredients and locally made honey.
When my girls were little, it became part of our trips: picking up some granola and having it for breakfast at the hotel – alongside the made-to-order omelets they were obsessed with – and bringing home extra as a souvenir. It got me into the habit of making my own granola for them once the vacation was over. I don’t think I’d ever made my own granola before finding this brand. It’s something that is readily available at the store, but it somehow tastes a little more special made from scratch with your own customized ingredients tailored to your family’s tastes.
Here’s my basic jump start for your own granola making. These measurements are my estimations. You can use any amounts to your own taste. I like to use extra thick oats, and I sometimes add other types of nuts. I’ve also made batches with vegetable oil but, for my taste, the coconut flakes and oil take me right back to my happy place. I can practically feel that ocean breeze.
Granola
1 lb rolled oats
3/4 cup shredded coconut
3/4 cup slivered almonds
1/2 cup sliced almonds
1/2 cup pepitas
1 tsp vanilla extract
salt (to taste)
honey (to taste)
coconut oil (to taste)
Combine all ingredients. Add the salt, honey, and coconut oil to taste (I keep sampling until it feels right). Spread evenly on a baking sheet and bake for approximately 30 minutes in 350 degree oven, stirring every 10 minutes until browned.
